Rich vanilla aromas, framed by red fruit notes of plum, strawberry and cherry, fill the nose of this California Cabernet Sauvignon. Luscious Bing cherry, strawberry and raspberry flavors on the palate give way to hints of cigar box and toffee on the long, textured finish.
Our 815 Cabernet Sauvignon reflects what each appellation gives to the wine. Napa Valley lends complexity, Lake County offers minerality and richness, and Sonoma adds a touch of spice to the blend. Cool, foggy mornings and warm afternoons create rich, concentrated flavor in the Cabernet grapes from two Santa Barbara County appellations, Happy Canyon and the Santa Ynez Valley. Fruit from Paso Robles and Monterey, where the vines enjoy a lengthy growing season, gives the wine its deep, inky hue and structured tannins. Rounding out the blend, our Lodi fruit is characterized by rich flavor and a soft texture. We source fruit from these varied regions throughout California to create an elegant, balanced wine.
Across California in 2015, bud break came early, preceding a cool spring and moderate summer. Late summer heat waves created one of the shortest growing seasons to date, prompting us to pick our fruit earlier than usual. Harvest wrapped up by the end of September, delivering Cabernet Sauvignon fruit with rich, ripe flavor and excellent structure.
Following harvest, the grapes from each vineyard were sorted and destemmed, then fermented as individual lots. As the lots aged in oak for 18 months, we tasted from the barrels frequently to assess tannin and flavor development. Finally, the lots were blended together to balance the characteristics of each vineyard.
